Ah Ee grew up with ducks and chickens – in the 1960s, his father had a business of distributing chickens and ducks to markets and restaurants. At the tender age of 12, he was forced by life circumstances to drop out of school to help with the family business. With his natural talent for cooking, he quickly became the household's primary chef for, supervised and taught by his mom (my grandma). It was then that he learn to cooked this Hokkien salted duck.
The duck remained a family dish for years. A must-have during birthdays, celebrations and festivals. In 2012, the idea of making it available to everyone materialized with our very first stall at Sembawang Food Center. Despite few having ever seen duck cooked in this way, we received lots of encouraging feedback (including a memorable old grandma telling us how her mom used to cook it for her when she was young!). Many of you became regulars and fans of this dish.
However, in 2015, due to unforeseen circumstances, we had to pause the business. And as life would have it, this pause lasted for 7 years. New stalls started to sell their own version of this dish, but many of you continued to ask when will would be back.
Well, to cut the story short, the wait is now over. You can once again enjoy this MSG-free dish freshly prepared to satisfy your longing taste buds! It is no doubt challenging to restart this in the middle of the pandemic, so we will need a lot of support from all of you. But hey, as long as you can have a piece of that juicy, savory and tender piece of duck meat dipped in our signature salty, sour and spicy chilli sauce now... who needs forever right?
